Varley Bailey, our founding winemaker, was a man of vision and ingenuity, who selected a rugged parcel of North-East Victorian bush and developed a thriving wine business. Where seasonal conditions allow we will continue to make this wine in his honour. The Varley Shiraz brings together the very best parcels of fruit grown at Baileys each year; effectively the finest Shiraz we can produce

Winemaker Notes

Impenetrable purple-maroon in colour, there are aromas of ripe raspberry and blood plum, with earthy spice and cedar. The palate is dripping with concentrated berry and ripe tannins for a strong structure and texture. Along with maturation notes of coffee and bitter chocolate.
